Wake up to Breakfast Already Made: Overnight Crockpot Pumpkin Pie Oatmeal Recipe

A few years ago I created an over night crock pot apple pie oatmeal recipe that was truly life changing for my husband and I.  Simply put steel cut oats in a crockpot on warm the night before you go to bed and you will wake up to perfectly cooked healthy oatmeal.  This is great if you don't have time to make breakfast in the mourning, or need to cook breakfast for a lot of people (simply double or triple the recipe).  My husband has made oatmeal in a crock pot the night before for breakfast since I first wrote this post.  This has also been one of our most popular recipes, so when Columbia Empire Farms sent me a sample of their pumpkin butter of course I had to make a pumpkin pie version with it!  


I like the ideal of using pumpkin butter because you can simply add as much as you want to taste and it has sugar and some flavorings already added so it's super convenient.  If you don't want to use pumpkin butter you can use canned pumpkin.  Amy in the Kitchen has a good version using canned pumpkin. 



What is so cool about this is that it makes it so much easier to eat healthy.  When I look at nutrition it can appear overwhelming to follow long term.  If you can have a healthy breakfast every day your 1/3 of the way there!  In the Gerson Therapy they suggest eating oatmeal every day for breakfast.  Another added bonus is oatmeal is so much cheaper than buying cereal or instant oatmeal.  Shopping is so much easier now that I just skip the cereal aisle all together and buy my bulk organic oatmeal.  Save money, time, and eat healthier, now that's what I'm talking about.


Pumpkin Pie Overnight Crockpot 

Steel Cut Oatmeal

(serves 2)

Ingredients
  • 1/2 cup Steel Cut Oats
  • 1 cup water
  • ½ cup milk (or fav milk alternative almond, coconut, etc)
  • 2 T Pumpkin butter (I used Columbia Empire Farms)
  • 1 tsp brown sugar
  • ¼ tsp sea salt
  • ½ tsp cinnamon
  • 1/8 tsp of nutmeg
  • 1/8 tsp ginger
  • 1 tsp pure vanilla extract
  • 2 T walnut pieces (optional)
  • 2 T Organic cranberries (optional)
Directions
1. Grease your slow cooker with olive oil or coconut oil
2. Put all ingredients into your slow cooker and put on the warm setting, go to bed and eat in the mourning!
